  • 8 bone rack of lamb, cut into individual cutlets
Marinade 1 :
  • 2 tablespoons – garlic ginger paste
  • 1 teaspoon – red chilli paste
  • 1 teaspoon – finely chopped coriander roots
  • Juice of half a lemon
Marinade 2 :
  • 6 tablespoons – thick yogurt
  • 4 tablespoons – paste of fried onions, 2 tablespoons of water, 1 tablespoon of finely chopped mint
  • 2 teaspoons – garam masala
  • 1 teaspoon – finely chopped chillies
  • Salt to season
  1. Put the lamb cutlets in a bowl and add all the ingredients from marinade 1. Combine thoroughly and set aside for half an hour.
  2. Add all the ingredients from marinade 2 in the same bowl and combine thoroughly, massaging the ingredients well into the lamb cutlets.
  3. Marinade for a minimum 2 hours or overnight.
  4. Heat the tandoor (charcoal oven) and bake it both sides until cooked.
  5. Leave to rest for 2 -3 minutes.
Serve with coriander, walnut chutney, bombay potatoes or salad. This appetizer recipe is ideal to serve on occasions like dinners. It is flavourful cutlet recipe which will be loved by everyone.
